Description

Delicious muffins combining rich chocolate, gooey marshmallows, and sweet ripe bananas, perfect for any occasion.


Ingredients

  • 1 cup mashed ripe bananas
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 1/2 cup graham cracker crumbs
  • 1/2 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the mashed bananas, sugar, brown sugar, oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until moistened.
  5. Fold in the chocolate chips, graham cracker crumbs, and mini marshmallows.
  6. Divide the batter among the prepared muffin cups, filling each about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool slightly in the tin before transferring to a wire rack to cool completely.

Notes

Store leftovers in an airtight container at room temperature for up to three days, or freeze for longer storage. Consider using dark chocolate chips for added depth.
