A delightful jam combining ripe blueberries and lavender for a sweet and aromatic treat.
Ingredients
Scale
- 2 cups fresh blueberries
- 1/4 cup fresh lavender buds
- 1 cup sugar
- 1/4 cup honey
- 2 tablespoons lemon juice
- 1/4 cup water
- 1 pouch fruit pectin
Instructions
- In a large saucepan, combine blueberries, lavender buds, and water. Cook over medium heat until the blueberries break down, about 10 minutes.
- Strain the mixture to remove lavender buds, allowing only the blueberry juice to remain.
- Return the liquid to the saucepan and add sugar, honey, lemon juice, and fruit pectin. Stir until well combined.
- Bring the mixture to a boil, stirring constantly.
- Once boiling, cook for 1-2 minutes until the mixture thickens.
- Pour the jam into sterilized jars and seal tightly.
- Allow to cool before refrigerating.
Notes
If making a vegan version, substitute honey with agave syrup. The jam can be stored in the fridge for up to three months.
