- 4 oz cream cheese, softened
- ½ cup sour cream
- 1 tablespoon lemon juice, freshly squeezed
- 1 tablespoon olive oil
- Additional chopped basil leaves for garnish
- Red pepper flakes, to taste
- Parmesan cheese, freshly grated for topping
Instructions
- Prep the tomatoes: Dice the Roma tomatoes and place them in a bowl. Add a pinch of salt to draw out their juices.
- Mix the ingredients: Combine tomatoes with minced garlic and chopped basil. Drizzle with olive oil and balsamic vinegar. Let sit for a few minutes to meld flavors.
- Blend the cheeses: In a separate bowl, combine cream cheese and sour cream. Blend until smooth. Add in crumbled feta, minced garlic, lemon juice, and olive oil.
- Adjust flavors: Season the cheese mixture with salt to taste.
- Layer it up: Spread the cheese mixture in a serving dish, then spoon the bruschetta topping over it.
- Garnish and serve: Top with additional basil, red pepper flakes, and grated Parmesan. Serve with toasted bread.
