Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 23 medium apples, peeled, cored, and diced
  • 1/2 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, mix together the oats, flour, baking soda, cinnamon, and salt.
  5. Gradually blend this dry mixture into the wet mixture.
  6. Gently fold in the diced apples.
  7. Spread half of the dough into the prepared baking pan and drizzle with half of the caramel sauce.
  8. Spread the remaining cookie dough over the top and drizzle with the rest of the caramel sauce.
  9. Bake for about 25-30 minutes or until golden brown.
  10. Allow to cool before cutting into bars and serving.

Notes

For a dairy-free version, substitute coconut oil for butter. For gluten-free, use a gluten-free flour blend. Ensure apples are diced uniformly to prevent mushiness.
