- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups oats
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2–3 medium apples, peeled, cored, and diced
- 1/2 cup caramel sauce
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, mix together the oats, flour, baking soda, cinnamon, and salt.
- Gradually blend this dry mixture into the wet mixture.
- Gently fold in the diced apples.
- Spread half of the dough into the prepared baking pan and drizzle with half of the caramel sauce.
- Spread the remaining cookie dough over the top and drizzle with the rest of the caramel sauce.
- Bake for about 25-30 minutes or until golden brown.
- Allow to cool before cutting into bars and serving.
Notes
For a dairy-free version, substitute coconut oil for butter. For gluten-free, use a gluten-free flour blend. Ensure apples are diced uniformly to prevent mushiness.
