Ingredients

  • 1 lb ground beef
  • 2 cups cooked rotini pasta
  • 1 cup corn (canned or frozen)
  • 1 packet ranch seasoning mix
  • 1 ½ cups shredded cheddar cheese
  • 1 cup milk
  • ½ cup sour cream
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ cup crushed Ritz crackers or panko breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked, then drain excess grease.
  3. Stir in the corn, ranch seasoning mix, garlic powder, and black pepper. Cook for 2 minutes.
  4. Reduce heat to low and add milk, sour cream, and 1 cup shredded cheddar cheese. Stir until smooth.
  5. Add the cheesy beef mixture to the cooked pasta and stir well to combine. Transfer to a greased baking dish.
  6. Sprinkle the remaining cheddar cheese and crushed crackers or breadcrumbs over the top. Bake for 15 minutes.
