Ingredients

  • 1 can (400g) artichoke hearts, drained and roughly chopped
  • 2 tbsp mayonnaise (or Greek yogurt for a lighter version)
  • 1 tsp Dijon mustard
  • 1 small shallot, finely chopped
  • 1 celery stalk, finely chopped (optional)
  • 1 tbsp capers or chopped pickles (optional)
  • Small handful fresh parsley, chopped
  • Juice of ½ lemon
  • Salt and pepper, to taste
  • Country bread, whole wheat bread, or ciabatta
  • Lettuce or arugula leaves
  • Optional cheese (feta, mozzarella, or provolone)

Instructions

  1. In a mixing bowl, combine the chopped artichoke hearts, mayonnaise, and Dijon mustard.
  2. Add the finely chopped shallot and celery (if using), along with capers and parsley. Squeeze in the lemon juice and season with salt and pepper to taste.
  3. Lightly toast your chosen bread if desired. Spread a generous layer of the artichoke mixture on one slice of bread.
  4. Top with your lettuce or arugula leaves and sprinkle on optional cheese if desired. Place a second slice of bread on top.
  5. Cut the sandwiches in half if preferred, serving immediately with a side salad or crunchy homemade chips.

Notes

For extra flavor, use roasted garlic mayonnaise. Adjust lemon juice depending on your tang preference.
