Description

Delightful macarons capturing the magic of the holiday season with vibrant green colors and a rich creamy filling reminiscent of Christmas cakes.


Ingredients

  • 70 g almond flour, fine and sifted
  • 63 g powdered sugar
  • 55 g egg whites, room temperature
  • 1/4 tsp cream of tartar, optional
  • 55 g granulated sugar
  • 1 stick unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp heavy whipping cream
  • 1 1/2–2 Little Debbie Christmas Tree Cakes, crumbled
  • 1/2 cup white chocolate, melted
  • Green sprinkles
  • Red buttercream frosting or royal icing

Instructions

  1. Sift almond flour and powdered sugar together by weight into a large bowl.
  2. Combine egg whites and cream of tartar in a mixing bowl. Beat until frothy, then gradually add granulated sugar and whip to stiff peaks (7-9 minutes).
  3. Fold the dry ingredients into the meringue in two batches until the batter flows like lava, about 60 folds.
  4. Pipe 1 1/2 inch rounds onto lined baking sheets.
  5. Allow the piped shells to rest for 20–40 minutes until dry to the touch.
  6. Bake the macarons at 300°F (150°C) for 15–17 minutes. Cool completely after baking.
  7. Beat the softened butter until creamy, then mix in powdered sugar and cream to a fluffy consistency. Fold in crumbled Christmas Tree Cakes.
  8. Pipe the filling onto half of the macaron shells, then cap with remaining shells.
  9. Dip the tops in melted white chocolate, sprinkle with green sprinkles, and drizzle with red icing.
  10. Refrigerate filled macarons in an airtight container for 24 hours for best texture.

Notes

For dietary swaps, consider using aquafaba instead of egg whites for a vegan version or gluten-free flour if required.
