Coconut Toffee Chocolate Chip Cookie Bars

Description

Fudgy, chocolatey bars filled with melty chocolate chips and crunchy toffee, perfect for any occasion.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ cups old-fashioned oats
  • 1 cup sweetened flaked coconut
  • ½ teaspoon salt
  • 1 cup light or dark brown sugar
  • 1 cup unsalted butter, softened
  • 1 large egg, lightly beaten
  • 1 cup semi-sweet chocolate chips
  • 1 can (14 oz) sweetened condensed milk
  • ¼ cup light corn syrup
  • 1 ½ cups toffee bits

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 13×9-inch baking dish.
  2. In a large bowl, combine the flour, oats, coconut, salt, and brown sugar. Mix at low speed until evenly blended.
  3. Add the softened butter and mix until crumbly. Beat in the egg until fully incorporated, then fold in the chocolate chips.
  4. Reserve about 1 ½ cups of the dough mixture for the topping.
  5. Press the remaining dough evenly into the bottom of the prepared pan and bake for 10 minutes.
  6. In a medium bowl, whisk together the sweetened condensed milk and corn syrup until smooth. Pour over the hot crust.
  7. Sprinkle toffee bits over the filling, and crumble the reserved dough over the top.
  8. Return to the oven and bake for an additional 25–30 minutes, or until golden brown.
  9. Cool completely in the pan before cutting into squares.

Notes

These bars can be stored in an airtight container for up to a week, or frozen for up to three months.
