- 1 large sweet onion, sliced 1/2 inch thick
- 4 cloves garlic, finely chopped
- 1 tsp sea salt or pink salt
- 1/2 tsp freshly cracked black pepper
- 2 cups whole shiitake mushrooms, cleaned and sliced
- 2 cups baby bella or cremini mushrooms, sliced
- 4 cups organic chicken broth or vegetable broth (gluten-free)
- 2 cups loosely chopped kale leaves
- 1/2 cup coconut milk or coconut cream
Instructions
- In a large pot, heat the olive oil over medium heat. Add the sliced onions, cooking until they soften and become golden brown, about 10-12 minutes.
- Stir in the chopped garlic, sea salt, and black pepper, sauté for another minute.
- Add the sliced shiitake and baby bella mushrooms, cooking for about 8-10 minutes until tender.
- Pour in the broth, bringing everything to a gentle simmer, cooking for 15-20 minutes.
- Stir in the chopped kale and coconut milk, cooking until the kale wilts, about 5 minutes.
- Ladle the soup into bowls and enjoy warm with crusty bread.
Notes
For a creamier soup, substitute heavy cream for coconut milk. It can easily be made vegan and gluten-free.
