Ingredients

  • 1 large sweet onion, sliced 1/2 inch thick
  • 4 cloves garlic, finely chopped
  • 1 tsp sea salt or pink salt
  • 1/2 tsp freshly cracked black pepper
  • 2 cups whole shiitake mushrooms, cleaned and sliced
  • 2 cups baby bella or cremini mushrooms, sliced
  • 4 cups organic chicken broth or vegetable broth (gluten-free)
  • 2 cups loosely chopped kale leaves
  • 1/2 cup coconut milk or coconut cream

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the sliced onions, cooking until they soften and become golden brown, about 10-12 minutes.
  2. Stir in the chopped garlic, sea salt, and black pepper, sauté for another minute.
  3. Add the sliced shiitake and baby bella mushrooms, cooking for about 8-10 minutes until tender.
  4. Pour in the broth, bringing everything to a gentle simmer, cooking for 15-20 minutes.
  5. Stir in the chopped kale and coconut milk, cooking until the kale wilts, about 5 minutes.
  6. Ladle the soup into bowls and enjoy warm with crusty bread.

Notes

For a creamier soup, substitute heavy cream for coconut milk. It can easily be made vegan and gluten-free.
