- 8 oz linguine
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions
- Cook linguine according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1-2 minutes.
- Add cherry tomatoes and cook until they start to soften, about 3 minutes.
- Add shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
- Stir in spinach and cook until wilted, about 1-2 minutes.
- Pour in heavy cream and add Parmesan cheese, stirring until the sauce thickens, about 3–5 minutes.
- Season with salt and pepper to taste.
- Toss the cooked linguine in the sauce until evenly coated.
- Serve hot, garnished with fresh basil.
Notes
For a healthier option, swap in whole wheat linguine or plant-based cream and cheese for a dairy-free version.
