Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions

  1. Cook linguine according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1-2 minutes.
  3. Add cherry tomatoes and cook until they start to soften, about 3 minutes.
  4. Add shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
  5. Stir in spinach and cook until wilted, about 1-2 minutes.
  6. Pour in heavy cream and add Parmesan cheese, stirring until the sauce thickens, about 3–5 minutes.
  7. Season with salt and pepper to taste.
  8. Toss the cooked linguine in the sauce until evenly coated.
  9. Serve hot, garnished with fresh basil.

For a healthier option, swap in whole wheat linguine or plant-based cream and cheese for a dairy-free version.
