A delightful twist on a classic, featuring crispy chicken, creamy dressing, and fresh romaine lettuce on toasted sourdough.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cups romaine lettuce, chopped
  • 4 tablespoons Caesar dressing
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 4 slices of sourdough bread
  • 1 tablespoon butter
  • Optional: sliced cherry tomatoes for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a shallow dish, combine the panko breadcrumbs and grated Parmesan cheese.
  3. Sprinkle salt and pepper on both sides of the chicken breasts.
  4. Press the seasoned chicken breasts into the breadcrumb mixture.
  5. Heat the olive oil in a skillet over medium-high heat and brown the chicken for about 3 minutes on each side.
  6. Transfer the browned chicken to a baking sheet and bake for 15-20 minutes until cooked through.
  7. Butter one side of each slice of sourdough bread and grill in a skillet until crisp and golden brown.
  8. Once cooked, let the chicken rest for a minute before slicing it into thin strips.
  9. Toss chopped romaine lettuce with Caesar dressing.
  10. Assemble the sandwich with dressed lettuce, sliced chicken, and optional cherry tomatoes between two slices of grilled sourdough bread.
  11. Serve immediately.

Notes

Feel free to swap chicken for turkey or use gluten-free breadcrumbs for dietary needs. Store leftovers in the refrigerator and assemble sandwiches just before serving.
