- 2 boneless, skinless chicken breasts
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 cups romaine lettuce, chopped
- 4 tablespoons Caesar dressing
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 4 slices of sourdough bread
- 1 tablespoon butter
- Optional: sliced cherry tomatoes for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a shallow dish, combine the panko breadcrumbs and grated Parmesan cheese.
- Sprinkle salt and pepper on both sides of the chicken breasts.
- Press the seasoned chicken breasts into the breadcrumb mixture.
- Heat the olive oil in a skillet over medium-high heat and brown the chicken for about 3 minutes on each side.
- Transfer the browned chicken to a baking sheet and bake for 15-20 minutes until cooked through.
- Butter one side of each slice of sourdough bread and grill in a skillet until crisp and golden brown.
- Once cooked, let the chicken rest for a minute before slicing it into thin strips.
- Toss chopped romaine lettuce with Caesar dressing.
- Assemble the sandwich with dressed lettuce, sliced chicken, and optional cherry tomatoes between two slices of grilled sourdough bread.
- Serve immediately.
Notes
Feel free to swap chicken for turkey or use gluten-free breadcrumbs for dietary needs. Store leftovers in the refrigerator and assemble sandwiches just before serving.
