Dark Chocolate Peppermint Brownies

Description

Fudgy dark chocolate brownies with a refreshing peppermint layer, perfect for holiday gatherings.


Ingredients

  • 6 Tablespoons butter or coconut oil
  • 1/2 cup chocolate chips
  • 1 large egg plus 1 large yolk
  • 1/2 teaspoon vanilla
  • 1/2 cup no-sugar-added applesauce
  • 3/4 cup blanched almond flour
  • 1/2 cup cocoa powder (Special Dark recommended)
  • 3 Tablespoons granulated monk fruit sweetener or stevia
  • 1/4 teaspoon salt
  • 1/2 cup coconut cream
  • 1 large egg (for peppermint layer)
  • 2 Tablespoons granulated monk fruit sweetener or stevia (for peppermint layer)
  • 1/4 teaspoon peppermint extract
  • Festive sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Coat an 8″ square pan with nonstick spray and set aside.
  3. In a large microwave-safe mixing bowl, combine the chocolate chips and butter/coconut oil. Microwave for about 60 seconds until nearly melted and stir until completely smooth.
  4. Stir in the whole egg, the yolk, vanilla, and applesauce into the melted mixture.
  5. In a separate bowl, whisk together the almond flour, cocoa powder, sweetener, and salt.
  6. Gradually stir the dry ingredients into the wet mixture until fully blended.
  7. In another bowl, whisk together the coconut cream and the large egg until fully combined. Stir in the sweetener and peppermint extract.
  8. Pour the chocolate batter into the prepared pan and smooth into an even layer.
  9. Gently pour the peppermint layer over the chocolate batter.
  10. Distribute festive sprinkles over the top.
  11. Bake for 45-50 minutes, or until a tester comes out mostly clean.
  12. Allow the brownies to cool slightly before chilling in the refrigerator.
  13. After chilling, slice into squares and serve.

Notes

Store in an airtight container in the fridge for up to a week or freeze for longer storage.
