Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the salted butter, light brown sugar, and granulated sugar until fluffy.
- Add the eggs one at a time, followed by the vanilla extract. Mix until smooth.
- In a separate bowl, sift together the flour, cocoa powder, baking soda, and baking powder. Gradually fold this into the wet mixture.
- Fold in the chocolate chips.
- Scoop dough onto the prepared baking sheet, leaving space for spreading. Bake for about 9 minutes.
- Let cookies cool on the tray for a few minutes before transferring to a wire rack.
- To make the frosting, beat the cream cheese and salted butter together. Add the powdered sugar and peppermint extract, mixing until fluffy.
- Frost each cooled cookie and sprinkle with crushed candy canes.
