- 2 cups sweet potatoes, peeled and diced

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon olive oil
- Optional toppings: green onions, hot sauce
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté the diced sweet potatoes until tender, about 10 minutes.
- In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until smooth.
- Add the cooked sweet potatoes and shredded cheese to the egg mixture, stirring to combine.
- Pour the mixture into a greased baking dish, spreading it evenly.
- Bake for 25-30 minutes or until the eggs are set and the top is lightly golden.
- Let it cool for a few minutes before serving, optionally topping with green onions or hot sauce.
