  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil
  • Optional toppings: green onions, hot sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté the diced sweet potatoes until tender, about 10 minutes.
  3. In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until smooth.
  4. Add the cooked sweet potatoes and shredded cheese to the egg mixture, stirring to combine.
