Ingredients

  • 2 cups Greek yogurt
  • 1 cup coconut flour
  • 1/2 cup honey or maple syrup
  • 4 large eggs
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional Add-ins: Lemon zest, Chocolate chips, Dried fruit

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, whisk together Greek yogurt, honey or maple syrup, eggs, vanilla extract, and salt until smooth.
  3. Add in coconut flour and baking soda, mixing until well combined.
  4. If desired, fold in any optional add-ins.
  5. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  6. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool before serving.

Notes
