- 3 large yellow onions, thinly sliced
- 4 cups low-sodium beef broth
- 1 cup shredded Gruyère cheese
- 2 tbsp unsalted butter
- 2 tsp fresh thyme (or 1 tsp dried thyme)
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the sliced onions and a pinch of salt; cook for about 20-25 minutes until golden brown.
- Pour in the beef broth and add thyme, bringing the mixture to a gentle simmer for an additional 10 minutes.
- While the onion-broth mixture simmers, bring a pot of salted water to a boil and cook the pasta until al dente. Reserve about a cup of pasta water before draining.
- Mix the cooked pasta with the onion-broth mixture until well coated, adding reserved pasta water to reach desired consistency.
- Transfer to an oven-safe dish, top with Gruyère cheese, and broil for 3-5 minutes until bubbling and golden.
Notes
For the best flavor, prepare the caramelized onions and broth mixture ahead of time. Store in an airtight container for up to 3 days. Reheat gently before adding cooked pasta.
