Description

A cozy dish that combines the rich flavors of French onion soup with hearty pasta, topped with melty Gruyère cheese.

Ingredients

Scale
  • 12 oz wide pasta (e.g., pappardelle)
  • 3 large yellow onions, thinly sliced
  • 4 cups low-sodium beef broth
  • 1 cup shredded Gruyère cheese
  • 2 tbsp unsalted butter
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the sliced onions and a pinch of salt; cook for about 20-25 minutes until golden brown.
  2. Pour in the beef broth and add thyme, bringing the mixture to a gentle simmer for an additional 10 minutes.
  3. While the onion-broth mixture simmers, bring a pot of salted water to a boil and cook the pasta until al dente. Reserve about a cup of pasta water before draining.
  4. Mix the cooked pasta with the onion-broth mixture until well coated, adding reserved pasta water to reach desired consistency.
  5. Transfer to an oven-safe dish, top with Gruyère cheese, and broil for 3-5 minutes until bubbling and golden.

Notes

For the best flavor, prepare the caramelized onions and broth mixture ahead of time. Store in an airtight container for up to 3 days. Reheat gently before adding cooked pasta.
