- 1 cup unsalted butter
- 2 cups sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1/2 cup strong brewed coffee
- 1 cup heavy cream
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Melt the butter in a saucepan over medium heat. Remove from heat and stir in sugar, eggs, and vanilla until well blended.
- Add flour, cocoa powder, baking powder, and salt, stirring until just combined.
- Fold in the chocolate chips and brewed coffee.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- For the frosting, whip the cream and powdered sugar until soft peaks form.
- Spread the coffee frosting on top of the cooled brownies.
- Optionally, drizzle melted chocolate over the frosting.
- Cut into squares and serve.
Notes
Store leftovers in an airtight container for up to 3 days at room temperature or in the fridge for a week. Freeze individual squares for up to a month.
