- 1 teaspoon baking soda

- 1 cup molasses
- 1 cup sugar
- 1/2 cup butter, softened
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C). In a large mixing bowl, combine flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
- Cream together the softened butter and sugar until light and fluffy. Add molasses and egg, mixing until well combined.
- Gradually add the dry mixture into the wet ingredients, stirring until just combined.
- Form the dough into balls about 1 inch in diameter and roll them in sugar.
- Place the dough balls on a parchment-lined baking sheet and bake for 8-10 minutes or until edges are set.
- Allow cooling on the baking sheet before transferring to a wire rack.
Notes
For a richer flavor, use dark molasses. Freshly ground spices enhance aroma and depth.
