Ingredients

  • 1 large egg
  • 1/4 cup molasses

  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, baking powder, ginger, cinnamon, cloves, and salt.
  3. In a separate large bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy and smooth.
  4. Add the egg, molasses, and vanilla extract to the butter mixture; mix until fully combined.
  5. Gradually add the dry mixture to the wet ingredients and mix until just combined.
  6. In a bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
  7. Scoop a tablespoon of gingerbread dough, flatten it, place a teaspoon of the cheesecake filling in the center, encase the filling with the dough, and roll it into a ball.
  8. Place the balls on the prepared baking sheet and bake for 10-12 minutes, or until the edges are set.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
