- 1 teaspoon baking soda
- 1 teaspoon baking powder

- 1 cup brown sugar, packed

- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, baking powder, ginger, cinnamon, cloves, and salt.
- In a separate large bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy and smooth.
- Add the egg, molasses, and vanilla extract to the butter mixture; mix until fully combined.
- Gradually add the dry mixture to the wet ingredients and mix until just combined.
- In a bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
- Scoop a tablespoon of gingerbread dough, flatten it, place a teaspoon of the cheesecake filling in the center, encase the filling with the dough, and roll it into a ball.
- Place the balls on the prepared baking sheet and bake for 10-12 minutes, or until the edges are set.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
Notes
For added flavor, consider adding chopped nuts or chocolate chips to the dough.
