Description

  • 1 cup Milk (lukewarm)
  • 1/4 cup Water (lukewarm)
  • 2 1/4 tsp Instant Yeast (1 packet)
  • 1/4 cup Granulated Sugar
  • 3 3/4 cup All-Purpose Flour
  • 4 tbsp Unsalted Butter (divided)
  • 1 tsp Salt
  • 1/8 cup Unsweetened Cocoa Powder
  • 1/8 cup Heavy Whipping Cream
  • 1/3 cup Semi-Sweet Chocolate Chips
  • 1/4 cup Graham Cracker Crumbs
  • 2 large Egg Whites (room temperature)
  • 1/2 cup Granulated Sugar
  • 1/8 tsp Cream of Tartar
  • 1/8 tsp Salt
  • 1/2 tsp Vanilla Extract (divided)

Instructions

  1. In a mixing bowl, combine lukewarm milk and water, then stir in the instant yeast and 1/4 cup sugar. Let it rest for about 5 minutes until frothy.
  2. In a large bowl, whisk together the all-purpose flour, salt, cocoa powder, and melted butter. Gradually add the yeast mixture, mixing until a soft dough forms.
  3. Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Shape it into a ball and place it in a greased bowl, covering with a damp cloth. Let it rise in a warm place for about 1 hour, until doubled in size.
  4. While the dough rises, mix the chocolate chips, heavy cream, and graham cracker crumbs in a small bowl.
  5. Once the dough has risen, punch it down and roll it out into a rectangle about 1/4 inch thick. Spread the filling evenly over the dough and roll it tightly. Cut the cylinder into thick slices and place them on a baking tray lined with parchment.
  6. Preheat the oven to 350°F (175°C). Let the rolls rise again for 30 minutes. Bake for 20-25 minutes until golden brown.
  7. In a clean bowl, whisk the egg whites with the cream of tartar and salt until soft peaks form. Gradually add 1/2 cup sugar and continue whisking until glossy. Add half a teaspoon of vanilla extract.
  8. Once the rolls are baked, spread the meringue on top and return to the oven for another 5-7 minutes until lightly browned. Allow cooling slightly before serving.

Notes

For gluten-free, use a gluten-free flour blend. For vegan, use aquafaba instead of egg whites.
