Ingredients

  • ¼ cup cashew butter (or peanut butter)
  • ¼ cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ¼ cup chocolate chips
  • 1 cup chocolate chips
  • 1 tsp coconut oil
  • Flaky sea salt (optional)

Instructions

  1. In a bowl, mix almond flour, cashew butter, maple syrup, melted coconut oil, vanilla, and salt until combined.
  2. Stir in ¼ cup chocolate chips to enhance sweetness.
  3. Transfer the mixture to parchment paper and press it down to flatten to about ½-inch thick.
  4. Melt 1 cup chocolate chips with 1 tsp coconut oil in the microwave, stirring until smooth.
  5. Spread the melted chocolate over the cookie dough and sprinkle flaky sea salt on top.
  6. Chill in the freezer for 10 minutes, then chop into chunks and enjoy!
