Ingredients

  • 1 medium spaghetti squash
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup heavy cream or low-fat alternative
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise, remove the seeds, and roast cut-side down on a baking sheet for 30-40 minutes, until tender.
  3. In a bowl, mix cream, minced garlic, salt, and pepper, then stir in shredded cheese until smooth.
  4. Scrape out the squash strands and mix with the cheese mixture.
  5. Transfer to a baking dish and top with grated Parmesan cheese.
  6. Bake for 15-20 minutes until golden and bubbly.
  7. Garnish with chopped parsley before serving.
