- 1 medium spaghetti squash
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup heavy cream or low-fat alternative
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the spaghetti squash in half lengthwise, remove the seeds, and roast cut-side down on a baking sheet for 30-40 minutes, until tender.
- In a bowl, mix cream, minced garlic, salt, and pepper, then stir in shredded cheese until smooth.
- Scrape out the squash strands and mix with the cheese mixture.
- Transfer to a baking dish and top with grated Parmesan cheese.
- Bake for 15-20 minutes until golden and bubbly.
- Garnish with chopped parsley before serving.
