Delicious homemade breakfast hot pockets filled with scrambled eggs, sausage, and cheese, perfect for busy mornings or leisurely weekends.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup milk
  • 1 cup scrambled eggs
  • 1 cup cooked sausage, crumbled
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the flour, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Gently stir in the milk to form a dough.
  5. On a floured surface, roll out the dough and cut it into rectangles.
  6. In another bowl, combine scrambled eggs, sausage, cheese, salt, and pepper.
  7. Place a spoonful of filling on one half of each rectangle, fold over, and seal the edges tightly.
  8. Place on a baking sheet and bake for 20-25 minutes until golden brown.
  9. Let cool slightly before serving.
