- ½ cup unsalted butter (softened)
- 1 cup light brown sugar
- 1 cup creamy peanut butter
- 1 large egg
- ½ teaspoon pure vanilla extract
- ½ cup sugar (to roll the cookie dough in)
- ¼ cup unsalted butter (softened, for filling)
- ½ cup creamy peanut butter (for filling)
- 1 ½ cups powdered sugar
- 2 tablespoons milk
- ¼ teaspoon vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine the flour, baking soda, and kosher salt.
- In a separate bowl, beat together the softened butter and brown sugar until creamy. Gradually add the peanut butter, egg, and vanilla extract, mixing until fully combined.
- Slowly add the dry flour mixture to the wet ingredients and stir until just combined.
- Roll the dough into small balls, roll them in sugar, and place them on a parchment-lined baking sheet. Flatten each ball slightly with a fork and bake for 10-12 minutes until lightly golden.
- For the filling, combine the softened butter, creamy peanut butter, powdered sugar, milk, and vanilla extract. Mix until smooth and creamy.
- Once the cookies have cooled, spread the filling on the flat side of half of the cookies and top with the second cookie to make sandwiches.
- Serve and enjoy with a glass of milk or coffee.
Notes
Store cookies in an airtight container at room temperature for up to five days, or freeze them for longer storage.
