Description

Delicious homemade cookies with a peanut butter filling that melt in your mouth, perfect for any occasion.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon kosher salt
  • ½ cup unsalted butter (softened)
  • 1 cup light brown sugar
  • 1 cup creamy peanut butter
  • 1 large egg
  • ½ teaspoon pure vanilla extract
  • ½ cup sugar (to roll the cookie dough in)
  • ¼ cup unsalted butter (softened, for filling)
  • ½ cup creamy peanut butter (for filling)
  • 1 ½ cups powdered sugar
  • 2 tablespoons milk
  • ¼ teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine the flour, baking soda, and kosher salt.
  2. In a separate bowl, beat together the softened butter and brown sugar until creamy. Gradually add the peanut butter, egg, and vanilla extract, mixing until fully combined.
  3. Slowly add the dry flour mixture to the wet ingredients and stir until just combined.
  4. Roll the dough into small balls, roll them in sugar, and place them on a parchment-lined baking sheet. Flatten each ball slightly with a fork and bake for 10-12 minutes until lightly golden.
  5. For the filling, combine the softened butter, creamy peanut butter, powdered sugar, milk, and vanilla extract. Mix until smooth and creamy.
  6. Once the cookies have cooled, spread the filling on the flat side of half of the cookies and top with the second cookie to make sandwiches.
  7. Serve and enjoy with a glass of milk or coffee.

Notes

Store cookies in an airtight container at room temperature for up to five days, or freeze them for longer storage.
