  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 cup cherry preserves
  • 1 cup powdered sugar (for icing)
  • 2 tablespoons milk (for icing)
  • Decorative sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together the all-purpose flour, almond flour, salt, and cinnamon in a bowl.
  3. Cream the softened butter with granulated sugar and powdered sugar until light and fluffy.
  4. Add the egg, vanilla extract, and almond extract to the butter mixture, mixing well.
  5. Gradually add the flour mixture to the wet ingredients and mix until just combined.
  6. Roll out the dough to about 1/4 inch thick and cut into desired shapes.
  7. Place cookies on prepared baking sheets and bake for 10-12 minutes until lightly golden.
  8. Spread cherry preserves on the bottom of half the cookies and sandwich with the other half.
  9. Mix powdered sugar with milk to make icing, then drizzle over the cookies and add sprinkles.
  10. Let the icing harden before serving.

Notes

Chill the dough for 30 minutes before rolling out for easier handling. Use a cookie scoop for uniform shapes.
