- 2 cups all-purpose flour
- 1/2 cup almond flour
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup powdered sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup cherry preserves
- 1 cup powdered sugar (for icing)
- 2 tablespoons milk (for icing)
- Decorative sprinkles (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together the all-purpose flour, almond flour, salt, and cinnamon in a bowl.
- Cream the softened butter with granulated sugar and powdered sugar until light and fluffy.
- Add the egg, vanilla extract, and almond extract to the butter mixture, mixing well.
- Gradually add the flour mixture to the wet ingredients and mix until just combined.
- Roll out the dough to about 1/4 inch thick and cut into desired shapes.
- Place cookies on prepared baking sheets and bake for 10-12 minutes until lightly golden.
- Spread cherry preserves on the bottom of half the cookies and sandwich with the other half.
- Mix powdered sugar with milk to make icing, then drizzle over the cookies and add sprinkles.
- Let the icing harden before serving.
Notes
Chill the dough for 30 minutes before rolling out for easier handling. Use a cookie scoop for uniform shapes.
