  • 1 Cup Frozen Peas
  • 2 Bay Leaves
  • Mashed Potatoes for Serving

Instructions

  1. Heat the olive oil in a large Dutch Oven over medium-high heat until shimmering.
  2. In a ziplock bag, combine beef, flour, salt, pepper, onion powder, garlic powder, rosemary, and thyme. Shake to coat the meat.
  3. Sear the seasoned meat in the hot oil until browned, about 8-10 minutes.
  4. Gradually stir in beef broth to create a rich base.
  5. Add carrots and bay leaves, then bring to a boil.
  6. Reduce heat, cover, and simmer for 45 minutes, stirring occasionally.
  7. Add frozen peas five minutes before cooking is done.
  8. Remove bay leaves and serve the stew with creamy mashed potatoes.

Notes

Avoid overcrowding the pot while searing the meat to ensure proper browning and avoid wateriness in the stew.
