- 2 Bay Leaves
- Mashed Potatoes for Serving
Instructions
- Heat the olive oil in a large Dutch Oven over medium-high heat until shimmering.
- In a ziplock bag, combine beef, flour, salt, pepper, onion powder, garlic powder, rosemary, and thyme. Shake to coat the meat.
- Sear the seasoned meat in the hot oil until browned, about 8-10 minutes.
- Gradually stir in beef broth to create a rich base.
- Add carrots and bay leaves, then bring to a boil.
- Reduce heat, cover, and simmer for 45 minutes, stirring occasionally.
- Add frozen peas five minutes before cooking is done.
- Remove bay leaves and serve the stew with creamy mashed potatoes.

Avoid overcrowding the pot while searing the meat to ensure proper browning and avoid wateriness in the stew.
