Description

A zesty and creamy casserole combining spicy buffalo sauce and tender chicken with crunchy jalapeños.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup cauliflower rice
  • 1 cup shredded cheese (optional)
  • 1/2 cup buffalo sauce
  • 1/2 cup diced jalapeños
  • 1/2 cup chopped green onions
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish with olive oil.
  2. In a large mixing bowl, combine shredded chicken, cauliflower rice, buffalo sauce, jalapeños, green onions, garlic powder, salt, and pepper. Mix until well-coated.
  3. Pour the mixture into the greased baking dish and spread it evenly.
  4. If using, sprinkle cheese on top of the mixture.
  5. Bake in the preheated oven for 25-30 minutes, or until heated through and cheese is bubbly.
  6. Let cool for a few minutes before serving.
