A zesty and creamy casserole combining spicy buffalo sauce and tender chicken with crunchy jalapeños.
Ingredients

- 2 cups shredded cooked chicken
- 1 cup cauliflower rice
- 1 cup shredded cheese (optional)
- 1/2 cup buffalo sauce
- 1/2 cup diced jalapeños
- 1/2 cup chopped green onions
- 1 tsp garlic powder
- Salt and pepper to taste
- Olive oil for greasing
Instructions
- Preheat the oven to 350°F (175°C). Grease a baking dish with olive oil.
- In a large mixing bowl, combine shredded chicken, cauliflower rice, buffalo sauce, jalapeños, green onions, garlic powder, salt, and pepper. Mix until well-coated.
- Pour the mixture into the greased baking dish and spread it evenly.
- If using, sprinkle cheese on top of the mixture.
- Bake in the preheated oven for 25-30 minutes, or until heated through and cheese is bubbly.
- Let cool for a few minutes before serving.
