Description

Deliciously crispy egg rolls filled with a creamy, spicy jalapeno and cheese filling, perfect for snacking or entertaining.


Ingredients

  • 8 ounces cream cheese (softened)
  • 1 cup sharp cheddar cheese (shredded)
  • 8 strips thick-cut bacon (cooked and crumbled, about 1 cup)
  • 4 large jalapeno peppers (seeded and finely diced)
  • 1 teaspoon garlic powder
  • 10 egg roll wrappers
  • Vegetable or canola oil (for frying)
  • Ranch dressing (for dipping)

Instructions

  1. In a large bowl, combine softened cream cheese, shredded cheddar cheese, crumbled bacon, diced jalapenos, and garlic powder. Mix until well combined.
  2. Place ⅓ cup of the jalapeno mixture onto the center of an egg roll wrapper. Lightly wet the edges with water, fold up the bottom corner, and fold in the side corners. Roll tightly to seal.
  3. Heat 2-3 inches of vegetable oil in a deep pot or fryer to 350°F.
  4. Carefully fry 2-3 egg rolls at a time until golden brown, about 2-3 minutes per side. Ensure even cooking.
  5. Remove and drain on a paper towel-lined plate. Serve hot with ranch dressing for dipping.

Notes

For a vegetarian version, omit the bacon and add black beans or corn. Use gluten-free wrappers for a gluten-free option.
