Ingredients

  • Kielbasa sausage
  • Potatoes (preferably Yukon Gold)
  • Carrots
  • Onions
  • Cream (or milk for a lighter version)
  • Chicken broth (or vegetable broth for vegetarian option)
  • Salt and pepper to taste
  • Garlic
  • Thyme (fresh or dried)

Instructions

  1. In a large pot, sauté chopped onions, carrots, and minced garlic over medium heat until softened, about 5 minutes.
  2. Add diced kielbasa to the pot and cook until browned, about 5–7 minutes.
  3. Stir in diced potatoes and pour in the chicken broth; bring to a boil.
  4. Reduce heat and let the mixture simmer until the potatoes are tender, about 15 minutes.
  5. Stir in the cream, thyme, salt, and pepper to taste.
  6. Ladle the soup into bowls and serve immediately, garnished with fresh herbs.

Notes

Use fresh herbs for better flavor and prevent overcooking the vegetables.
