Ingredients

- 1 cup low-fat cottage cheese
- 1 cup fresh blueberries (plus extra for garnish)
- 1 tablespoon lemon zest (from about 1 lemon)
- 2 tablespoons honey (or maple syrup for a vegan option)
- ½ cup almond flour
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a mixing bowl, gently combine the cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla extract, and a pinch of salt.
- Cover the mixture and chill in the refrigerator for 15–20 minutes.
- Using a tablespoon, scoop out portions of the chilled mixture and roll them into tight, compact balls.
- Optional: Preheat your oven to 325°F (160°C) and bake the bites for 8–10 minutes for a lightly toasted exterior.
- Once out of the oven, let the bites cool slightly. Drizzle with extra honey if desired and garnish with more blueberries.

Notes
These can be made ahead of time and stored in an airtight container for up to five days. Freeze for up to a month as well.
