Description

This delightful sandwich blends crunchy cucumbers and creamy avocados on hearty bread, making it a fresh and satisfying choice for any meal.


Ingredients

  • 2 slices of bread (whole grain, sourdough, or rye)
  • 1 ripe avocado
  • 1 medium cucumber, thinly sliced
  • 1/2 cup fresh leafy greens (lettuce, spinach, or arugula)
  • 1/4 cup cherry tomatoes, halved (optional)
  • 2 tbsp red onion, thinly sliced
  • 1 tbsp fresh herbs (dill, basil, or cilantro), chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 1 tsp olive oil or favorite sandwich spread (optional)

Instructions

  1. If desired, lightly toast the bread slices for added crunch.
  2. Mash the ripe avocado with lemon juice, salt, and pepper in a bowl.
  3. Spread the mashed avocado on one side of each bread slice.
  4. Layer the cucumber slices generously on top of the avocado spread.
  5. Top with fresh leafy greens, sliced red onion, and cherry tomatoes if using.
  6. Sprinkle chopped fresh herbs on top.
  7. Drizzle with olive oil or your favorite sandwich spread if desired.
  8. Close the sandwich with the other slice of bread and gently press down.
  9. Cut the sandwich in half and serve immediately.

Notes

To prevent the avocado from browning, add a little extra lemon juice. Store any leftovers in an airtight container in the refrigerator for up to a day.
