- 2 slices of bread (whole grain, sourdough, or rye)
- 1 ripe avocado
- 1 medium cucumber, thinly sliced
- 1/2 cup fresh leafy greens (lettuce, spinach, or arugula)
- 1/4 cup cherry tomatoes, halved (optional)
- 2 tbsp red onion, thinly sliced
- 1 tbsp fresh herbs (dill, basil, or cilantro), chopped
- 1 tsp lemon juice
- Salt and pepper to taste
- 1 tsp olive oil or favorite sandwich spread (optional)
Instructions
- If desired, lightly toast the bread slices for added crunch.
- Mash the ripe avocado with lemon juice, salt, and pepper in a bowl.
- Spread the mashed avocado on one side of each bread slice.
- Layer the cucumber slices generously on top of the avocado spread.
- Top with fresh leafy greens, sliced red onion, and cherry tomatoes if using.
- Sprinkle chopped fresh herbs on top.
- Drizzle with olive oil or your favorite sandwich spread if desired.
- Close the sandwich with the other slice of bread and gently press down.
- Cut the sandwich in half and serve immediately.
Notes
To prevent the avocado from browning, add a little extra lemon juice. Store any leftovers in an airtight container in the refrigerator for up to a day.
