  • 1/2 cup unsalted butter, melted

  • 2 large eggs
  • 1/4 cup maple syrup
  • 1/4 cup bourbon
  • 1 teaspoon vanilla extract

  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped toffee

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas until smooth in a mixing bowl.
  3. Stir in the melted butter and brown sugar until well combined.
  4. Add the eggs, maple syrup, bourbon, and vanilla extract, mixing well.
  5. Sprinkle the baking soda and salt over the mixture and stir thoroughly to combine.
  6. Gradually add the flour, mixing until just incorporated.
  7. Gently fold in the chopped toffee.
  8. Pour the batter into the prepared loaf pan and spread evenly.
  9. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
