- 3 ripe bananas
- 1/2 cup unsalted butter, melted
- 1 cup brown sugar
- 2 large eggs
- 1/4 cup maple syrup
- 1/4 cup bourbon
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 cup chopped toffee
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Mash the ripe bananas until smooth in a mixing bowl.
- Stir in the melted butter and brown sugar until well combined.
- Add the eggs, maple syrup, bourbon, and vanilla extract, mixing well.
- Sprinkle the baking soda and salt over the mixture and stir thoroughly to combine.
- Gradually add the flour, mixing until just incorporated.
- Gently fold in the chopped toffee.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
