Ingredients
Scale
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 2 cups fresh peaches, diced
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
Instructions
- Preheat your oven to 350°F (175°C) and prepare a bundt cake pan by greasing and flouring it.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy, about 4-5 minutes.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the flour mixture to the butter mixture, alternating with buttermilk, until just combined.
- Gently fold in the diced peaches.
- Pour the batter into the prepared bundt pan and smooth the top with a spatula.
- Bake for 55-65 minutes, or until a toothpick comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Serve with whipped cream or ice cream if desired.
Notes
Using fresh peaches enhances the flavor. You can use canned peaches but ensure they are well-drained. The cake keeps well for several days when stored in an airtight container.
