- Red gel food coloring

Instructions
- Whisk together flour, baking powder, and salt in a medium bowl and set aside.
- Cream softened butter and granulated sugar together until light and fluffy. Beat in egg, vanilla, and peppermint extracts.
- Add dry ingredients and mix on low until a soft dough forms.
- Divide dough; color one half with red gel food coloring.
- Chill both dough halves separately in plastic wrap for 30 minutes.
- Roll out plain and red dough into rectangles, about ¼ inch thick.
- Layer red dough on plain and roll tightly into a log.
- Chill the log in plastic wrap for 2 hours.
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- Slice the chilled log into ¼ inch thick rounds and roll in coarse sugar if desired.
- Bake for 8 to 10 minutes until edges are lightly golden.
- Cool on baking sheets before transferring to a wire rack.
