Ingredients

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

  • Red gel food coloring
  • ¼ cup coarse sugar or crushed peppermint candies for coating

Instructions

  1. Whisk together flour, baking powder, and salt in a medium bowl and set aside.
  2. Cream softened butter and granulated sugar together until light and fluffy. Beat in egg, vanilla, and peppermint extracts.
  3. Add dry ingredients and mix on low until a soft dough forms.
  4. Divide dough; color one half with red gel food coloring.
  5. Chill both dough halves separately in plastic wrap for 30 minutes.
  6. Roll out plain and red dough into rectangles, about ¼ inch thick.
  7. Layer red dough on plain and roll tightly into a log.
  8. Chill the log in plastic wrap for 2 hours.
  9. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  10. Slice the chilled log into ¼ inch thick rounds and roll in coarse sugar if desired.
  11. Bake for 8 to 10 minutes until edges are lightly golden.
  12. Cool on baking sheets before transferring to a wire rack.
