Ingredients

  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1012 canned pineapple rings, well-drained and patted dry
  • Additional sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line your baking sheets with parchment paper.
  3. Cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Beat in the egg and vanilla extract until well combined.
  5. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients, mixing until a soft dough forms.
  6. Roll the dough into 1½ tbsp balls and flatten slightly on the baking sheet.
  7. Top each cookie with a pineapple ring, pressing gently.
  8. Sprinkle additional sugar on top of each pineapple ring.
  9. Bake for 12–14 minutes until edges are golden.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Use fresh, ripe pineapples for the best flavor. For a dairy-free option, substitute coconut oil for butter.
