Ingredients

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 2½ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- 10–12 canned pineapple rings, well-drained and patted dry
- Additional sugar for sprinkling
Instructions
- Preheat your oven to 350°F (175°C).
- Line your baking sheets with parchment paper.
- Cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients, mixing until a soft dough forms.
- Roll the dough into 1½ tbsp balls and flatten slightly on the baking sheet.
- Top each cookie with a pineapple ring, pressing gently.
- Sprinkle additional sugar on top of each pineapple ring.
- Bake for 12–14 minutes until edges are golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Use fresh, ripe pineapples for the best flavor. For a dairy-free option, substitute coconut oil for butter.
