- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 (3.4 oz) box instant pistachio pudding mix
- 1 1/2 cups milk
- 1/2 cup heavy cream
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped pistachios (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking pan.
- Cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the egg and 2 teaspoons of vanilla extract, beating until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt; then add to the wet ingredients until just mixed.
- Press the dough into the prepared pan and bake for 12–15 minutes, or until edges are lightly golden. Allow to cool.
- In a bowl, whisk together the pistachio pudding mix, milk, and heavy cream; refrigerate for 5-10 minutes to thicken.
- Spread the pistachio pudding evenly over the cooled cookie base.
- Garnish with chopped pistachios, pressing them lightly into the pudding.
- Refrigerate for at least 2 hours before cutting into squares and serving.
Notes
For variations, you can use coconut flour instead of all-purpose flour or almond milk instead of dairy. Store in an airtight container for up to a week.
