Description
Moist, spiced pumpkin bars topped with creamy, tangy cream cheese frosting—a cozy fall dessert that’s easy to bake, serve, and customize. A must for holiday trays and family gatherings!
Ingredients
2 cups all-purpose flour
1 cup pumpkin puree (pure, canned or homemade)
1 cup light brown sugar
1/2 cup granulated sugar
1/2 cup vegetable oil
3 large eggs, room temp
2 tsp pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp ginger, 1/4 tsp cloves)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
1/4 cup Greek yogurt or sour cream (optional, for moistness)
Cream Cheese Frosting:
8 oz cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar, sifted
1 tsp vanilla extract
Pinch salt
Optional: 1/2 tsp orange zest, pinch cinnamon
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment and lightly grease.
2. Whisk pumpkin puree, sugars, oil, eggs, vanilla, and yogurt until smooth.
3. Mix flour, spices, baking powder, soda, and salt in a second bowl.
4. Fold dry mix gently into wet mixture—don’t overmix.
5. Pour batter into pan and spread evenly. Bake 25–30 minutes, until toothpick comes out clean.
6. Cool bars completely in the pan before frosting.
7. For frosting, beat cream cheese and butter until smooth. Add sugar, vanilla, zest/cinnamon as desired.
8. Frost cooled bars, chill to set, slice, and serve.
Notes
Use room temperature eggs/dairy for best mixing.
Try gluten-free flour and add nuts or caramel swirls for variations.
Unfrosted bars freeze well for 2 months; frost after thawing.
Bars with frosting can be refrigerated for up to 5 days.
