Ingredients

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups sweetened shredded coconut
- 1 1/2 cups fresh raspberries
- 1 cup white chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Cream together the butter, granulated sugar, and brown sugar until smooth.
- Add in the eggs and vanilla extract, mixing well.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet mixture until combined.
- Fold in the shredded coconut.
- Spread half of the batter into the prepared baking pan, pressing down to form an even base.
- Evenly distribute the raspberries and optional white chocolate chips over the batter.
- Spread the remaining batter on top of the raspberries.
- Bake for 30-35 minutes or until golden brown on top.
- Let cool before cutting into squares and serving.

Store leftover bars in an airtight container at room temperature for up to 3 days or freeze for up to three months.
