Description

A delightful treat combining fresh raspberries and rich coconut with a crispy graham cracker crust.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup unsalted butter, melted
  • 1 cup sweetened condensed milk
  • 1 cup fresh raspberries
  • 1/2 cup chocolate chips (optional)
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a mixing bowl, combine graham cracker crumbs, shredded coconut, and melted butter. Press into the bottom of the prepared pan.
  3. Pour sweetened condensed milk evenly over the crust.
  4. Scatter fresh raspberries on top, followed by chocolate chips and nuts if using.
  5. Bake for 25-30 minutes, until edges are golden and the center is set.
  6. Allow to cool before cutting into bars.

Notes

Store leftovers in an airtight container at room temperature for up to three days, or refrigerate for up to a week. These bars can also be frozen for up to a month.
