- 1 bulb garlic
- 1 medium onion, chopped
- 2 tablespoons olive oil
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
- Crusty bread for serving
Instructions
- Peel and roughly chop the garlic and onion. In a large pot, heat the olive oil over medium heat.
- Add the garlic and onion to the pot, sautéing until softened but not browned, about 5-7 minutes.
- Pour in the broth and bring to a boil. Reduce the heat and let it simmer for 15 minutes.
- Using an immersion blender, blend the soup until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley and a side of crusty bread.
Notes
For a lighter version, substitute heavy cream with half-and-half or a plant-based alternative. You can also add diced potatoes or carrots for extra texture.
