- 2 lbs beef short ribs
- 2 cups apple cider
- 1 onion, chopped
- 2 carrots, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Generously season the beef short ribs with salt and pepper. In a large pot or slow cooker, heat olive oil over medium-high heat and brown the ribs on all sides. Set aside once golden.
- Remove the ribs and add onions, carrots, celery, and garlic to the pot. Sauté until the veggies soften, about 5-7 minutes.
- Pour in the apple cider, scraping up any browned bits from the pot’s bottom.
- Return the short ribs to the pot, cover, and cook on low for 4-6 hours until tender.
- Serve hot, garnished with fresh thyme.
Notes
For a different texture, use beef chuck; for lower sodium, opt for low-sodium cider.
