Ingredients

  • 2 lbs beef short ribs
  • 2 cups apple cider
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Generously season the beef short ribs with salt and pepper. In a large pot or slow cooker, heat olive oil over medium-high heat and brown the ribs on all sides. Set aside once golden.
  2. Remove the ribs and add onions, carrots, celery, and garlic to the pot. Sauté until the veggies soften, about 5-7 minutes.
  3. Pour in the apple cider, scraping up any browned bits from the pot’s bottom.
  4. Return the short ribs to the pot, cover, and cook on low for 4-6 hours until tender.
  5. Serve hot, garnished with fresh thyme.

Notes

For a different texture, use beef chuck; for lower sodium, opt for low-sodium cider.
