  • 1/2 cup vegetable oil or melted butter
  • 1 cup light brown sugar, packed
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup chocolate chips

Instructions

  1. In a large bowl, combine the melted butter, brown sugar, and mashed banana. Mix well.
  2. Add the egg yolk and vanilla extract to the banana mixture and stir until thoroughly combined.
  3. Next, add the flour, salt, baking soda, and cinnamon. Stir until just combined.
  4. Gently fold in the chocolate chips.
  5. Cover the dough and let it rest for about 15 minutes while preheating the oven to 350°F.
  6. Line a cookie sheet with parchment paper.
  7. Scoop out about 1-inch balls of dough onto the prepared sheet, spacing them about 2 inches apart. Bake for 10 to 11 minutes.
  8. Allow the cookies to cool on the sheet for a few minutes and then transfer to a wire rack.
