- 1 small overripe banana, mashed (measuring 1/4 cup)
- 1/2 cup vegetable oil or melted butter
- 1 cup light brown sugar, packed
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 1/3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 2/3 cup chocolate chips
Instructions
- In a large bowl, combine the melted butter, brown sugar, and mashed banana. Mix well.
- Add the egg yolk and vanilla extract to the banana mixture and stir until thoroughly combined.
- Next, add the flour, salt, baking soda, and cinnamon. Stir until just combined.
- Gently fold in the chocolate chips.
- Cover the dough and let it rest for about 15 minutes while preheating the oven to 350°F.
- Line a cookie sheet with parchment paper.
- Scoop out about 1-inch balls of dough onto the prepared sheet, spacing them about 2 inches apart. Bake for 10 to 11 minutes.
- Allow the cookies to cool on the sheet for a few minutes and then transfer to a wire rack.
Notes
Store cookies in an airtight container for up to five days. Freeze for longer storage.
