Instructions

  1. Slice the pound cake into thin strips, about ½ inch thick.
  2. Mix the cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Spread the cream cheese mixture evenly on each pound cake strip.
  4. Add sliced strawberries on top and roll tightly.
  5. Coat the rolled sushi in crushed shortbread cookies.
