- 2 cups grated zucchini
- 1 cup peeled and diced apples
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs

- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped nuts (optional)
- 1/2 cup rolled oats (for streusel topping)
- 1/4 cup butter, melted (for streusel topping)
- 1/4 cup brown sugar (for topping)
- 1 teaspoon cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the grated zucchini, diced apples, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well until fully combined.
- In another bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture until just combined. If using, gently fold in chopped nuts.
- Pour the batter into the prepared loaf pan and spread it evenly.
- For the streusel topping, mix together rolled oats, melted butter, brown sugar, and cinnamon in a small bowl.
- Sprinkle the streusel mixture over the batter in the loaf pan.
- Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes, then remove and transfer to a wire rack to cool completely.

Store in plastic wrap or foil; can be kept at room temperature for up to three days or refrigerated for a week. Freeze for up to three months.
