  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup rolled oats (for streusel topping)
  • 1/4 cup butter, melted (for streusel topping)
  • 1/4 cup brown sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the grated zucchini, diced apples, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well until fully combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture until just combined. If using, gently fold in chopped nuts.
  5. Pour the batter into the prepared loaf pan and spread it evenly.
  6. For the streusel topping, mix together rolled oats, melted butter, brown sugar, and cinnamon in a small bowl.
  7. Sprinkle the streusel mixture over the batter in the loaf pan.
  8. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for about 10 minutes, then remove and transfer to a wire rack to cool completely.
