Delightful oven-baked tacos filled with savory ground turkey, black beans, and melted Monterey Jack cheese, perfect for any occasion.


Ingredients

  • 1 pound lean ground turkey
  • 1 tablespoon taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 can chopped green chiles
  • 1 cup Monterey Jack cheese, shredded
  • 8 small flour tortillas
  • 1 avocado
  • 1/2 cup sour cream
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet over medium heat, cook the ground turkey until browned and crumbly, about 5-7 minutes. Stir in the taco seasoning.
  3. In a large bowl, mix the cooked turkey, black beans, green chiles, and half of the shredded Monterey Jack cheese.
  4. Fill each tortilla with the turkey mixture, rolling tightly and placing seam-side down in a baking dish.
  5. Sprinkle remaining Monterey Jack cheese over the top of the tacos.
  6. Bake in the preheated oven for 15-20 minutes until crispy and golden.
  7. Prepare the avocado sauce by mashing the avocado and mixing it with sour cream and lime juice; season with salt and pepper.
  8. Serve tacos warm with the creamy avocado dipping sauce.
