- 1 pound lean ground turkey
- 1 tablespoon taco seasoning
- 1 can black beans, drained and rinsed
- 1 can chopped green chiles
- 1 cup Monterey Jack cheese, shredded
- 8 small flour tortillas
- 1 avocado
- 1/2 cup sour cream
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet over medium heat, cook the ground turkey until browned and crumbly, about 5-7 minutes. Stir in the taco seasoning.
- In a large bowl, mix the cooked turkey, black beans, green chiles, and half of the shredded Monterey Jack cheese.
- Fill each tortilla with the turkey mixture, rolling tightly and placing seam-side down in a baking dish.
- Sprinkle remaining Monterey Jack cheese over the top of the tacos.
- Bake in the preheated oven for 15-20 minutes until crispy and golden.
- Prepare the avocado sauce by mashing the avocado and mixing it with sour cream and lime juice; season with salt and pepper.
- Serve tacos warm with the creamy avocado dipping sauce.

These tacos can be prepped ahead of time and stored in the fridge for up to 2 days or frozen for up to 3 months.
