Ingredients

- 1 lb ground pork and shrimp
- 3 cloves garlic, minced
- 1 inch ginger, grated
- ¼ cup fresh cilantro, chopped
- 1 tsp salt
- 2 tbsp Thai red curry paste
- Dumpling wrappers
- 4 cups vegetable broth
- 1 can (14 oz) coconut milk
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup snap peas
- 2 tbsp fish sauce
- Juice of 1 lime
Instructions
- Mix filling ingredients.
- Assemble and seal dumplings.
- Cook dumplings (steam or pan-fry).
- Sauté garlic, ginger, and curry paste in pot.
- Add broth and coconut milk; bring to a simmer.
- Add vegetables, cook until tender.
- Gently add dumplings; mix in lime juice and fish sauce before serving.
