  • 1 tablespoon lime juice
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 12 slices thick sourdough bread
  • 3 tablespoons butter, softened
  • 1 teaspoon garlic powder
  • 8 large lettuce leaves
  • 8 thick tomato slices
  • 4 slices red onion
  • 8 pickle spears
  • 8 slices Swiss cheese
  • 4 slices sharp cheddar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey mustard
  • 1 tablespoon balsamic glaze
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon chipotle powder
  • 12 long toothpicks

Instructions

  1. Prepare the chicken marinade by combining olive oil, garlic powder, paprika, Italian seasoning, salt, and black pepper. Marinade the chicken breasts thoroughly.
  2. Pound chicken breasts to an even 3/4-inch thickness for uniform cooking.
  3. Rub the seasoned chicken with olive oil and let it rest at room temperature for about 15 minutes.
  4. Cook the bacon in a large skillet over medium heat until crispy, sprinkling it with brown sugar and spices in the last 2 minutes.
  5. Preheat a grill pan or outdoor grill to medium-high heat. Grill chicken breasts for 6-7 minutes on each side until cooked through, with an internal temperature of 165°F.
  6. Allow grilled chicken to rest for 5 minutes, then slice into thick pieces.
  7. Toast sourdough bread slices until golden brown and crispy.
  8. Prepare the avocado ranch spread by mixing mashed avocados, mayonnaise, ranch dressing, lime juice, minced garlic, and salt.
  9. Assemble the sandwich by spreading garlic butter on one side of each toasted bread slice, then layering with avocado ranch, lettuce, tomato, chicken, Swiss cheese, and bacon.
  10. Crown with the final slice of bread, securing each quarter with toothpicks before cutting diagonally.
  11. Serve immediately with pickle spears and chips.
